Delicious and Easy

My Mother-in-law has given me a few recipes that are fabulous (blue cheese that I eat with a spoon), but this most recent is really delicious and EASY. She got it from the Rachel Ray show and I would have taken a picture but it wouldn't look as good as it tasted. Basically you throw all the ingredients in a pot and call it good. If you like cheesy tortilla soup I really recommend this. Enjoy!

Chicken Chili

1 32 ounce box chicken stock
3 cans of white beans, left undrained (I used navy beans)
5 cups of cooked chicken (rotisserie was easiest and Buster Cat enjoyed the leftovers)
1 16 ounce jar of salsa
1 8 ounce block of pepper jack cheese grated
2 teaspoons ground cumin
2 cloves garlic minced
Pepper to taste
1/2 cup fined crushed corn chips (I used Fritos)
sour cream and cheese for garnish

Place everything except chips in pot. Cook until cheese is melted. Add the corn chips and simmer 10 minutes to thicken. Garnish with more chips, cheese and sour cream.
